- 1 cup self-rising cornmeal
- ½ cup all-purpose flour
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons sugar (optional)
- 2 tablespoons melted butter (plus more for greasing the pan)
- Optional: shredded cheddar, chopped jalapeños, or smoked paprika
Instructions
- In a bowl, whisk together buttermilk, egg, and melted butter.
- Stir in cornmeal, flour, and sugar until just combined.
- Grease a 6-inch round cake pan or oven-safe dish with butter or spray oil.
- Pour the batter into the pan and smooth the top.
- Preheat air fryer to 350°F.
- Place pan in air fryer basket and cook for 15–18 minutes, or until a toothpick inserted comes out clean.
- Let cool for 5 minutes before slicing. Serve warm.
Notes
Add cheddar and jalapeños for a spicy twist, or swap butter for bacon grease for rich flavor. Perfect served with chili, soup, or just a pat of butter and honey.
