Step 1 – Drain & Dry the Potatoes: Drain the potatoes and pat dry. Halve any large ones.
Step 2 – Season with Spices: Toss in a bowl with olive oil, garlic powder, paprika, thyme, salt, and pepper.
Step 3 – Air Fry Until Golden: Preheat air fryer to 400°F (200°C). Cook for 15–18 minutes, shaking halfway through.
Step 4 – Serve or Store: Serve hot. Reheat leftovers in the air fryer at 375°F for 3–4 minutes.

Use parchment paper with holes to reduce sticking.
