Ingredients
1 (4 pound) chicken, cut into pieces
1 cup buttermilk
2 cups all-purpose flour for coating
1 teaspoon paprika
Salt and pepper to taste
2 quarts vegetable oil for frying
Instructions
1. Take your cut up chicken pieces and skin them if preferred.
2. Put the flour in a large plastic bag and season with paprika, salt, and pepper.
3. Dip chicken in buttermilk, then coat in seasoned flour by shaking in the bag.
4. Place coated chicken on a tray and let sit until flour becomes paste-like.
5. Heat oil in a cast iron skillet until very hot.
6. Brown chicken on both sides in hot oil, then reduce heat and cover to cook for 30 minutes.
7. Uncover, raise heat, and fry until crispy.
8. Drain chicken on paper towels and keep warm in the oven if frying in batches.
Notes
Letting the flour become paste-like on the chicken before frying is crucial to achieve a crispy texture.
Use a cast iron skillet for best heat retention.
Adjust seasoning as desired for more heat or depth.
